Benedetto Cavalieri pasta is renowned worldwide for the rigorous selection of Italian durum wheats that grow mainly on the hills of Puglia and Basilicata. The wheat is cultivated without the use of chemical fertilizers that increase yield at the expense of quality. The production method, known as the “delicate method,” involves prolonged kneading, slow mixing, pressing and bronze drawing, and low-temperature drying.
