Alica is a family-run company founded in the 1920s in Laurenzana, in the province of Potenza. It uses the best 100% Italian wheat sourced from Basilicata and an area bordering the Tavoliere delle Puglie. The durum wheat is milled into semolina using mills located 900 meters above sea level, powered by spring water at a temperature not exceeding 25°C. The resulting semolina is then slowly bronze-extruded and left to dry for about two days at a temperature between 36°C and 40°C. Thanks to these slow processes and low temperatures, the pasta has a pleasant amber-yellow color, a dense texture, and is firm enough to hold its shape well during cooking while preserving the characteristic flavor of the wheat.
