Alica is a family-run business that began in the 1920s in Laurenzana, in the province of Potenza. It uses the finest 100% Italian durum wheat from Basilicata and an area bordering the Tavoliere delle Puglie plateau. The durum wheat is transformed into semolina using mills located 900 meters above sea level, fed by spring water at a temperature no higher than 25°C. The resulting semolina is then slowly bronze-drawn and left to dry for about two days at a temperature between 36°C and 40°C. Thanks to these slow rhythms and low temperatures, the pasta is a pleasant amber yellow, textured, and thick enough to hold its shape well when cooked and preserve the wheat’s characteristic flavor.
